Recipe

Pastry Ingredients:

150g salted butter
50g cream cheese
250g cake flour
50g milk powder
50g caster sugar
2 egg yolks
1/2 egg white

*1 egg yolk for egg wash.

Pineapple Filling Ingredients:

300g Pineapple filling (Grate the flesh of 2 medium size pineapples, sieved away excess liquid and cook the grated flesh with cinnamon powder and rock sugar till the mixture is almost dry. Use kitchen towel to pat away the excess liquid after it’s cooled. Weigh the pineapple fillings first then divide by 38. )

Method:

1. Cream butter, cream cheese and sugar till creamy.

2. Mix 2 egg yolks and 1/2 egg white. Add a bit to the butter mixture and and mix till the egg mixture is finished.

3. Sift flour, milk power and baking powder into the butter mixture and mix till a dough is formed with a glossy surface.

4. Weigh the dough and divide into 38 portions. Wrap each pineapple ball with the dough. You can choose to shape the tart boxy, round or in any other shapes you like.

5. Use a pastry brush to coat the tarts with 1 egg yolk.

6. Bake the tarts in preheated oven at 160 Degrees Celsius for 20min.
